Salmon Sorbet
Salmon is an oily fish thus bearing properties of fats essential for our well being. Yofu is a live soya
( non genetically modified ) product which can be used for any mousses or pastes.
This sorbet is a light dish and is probably best used as a starter.
  • 8 oz cooked salmon
  • 4 tablespoons Yofu
  • 1 tablespoon horseradish
  • A squeeze of lemon juice
  • pinch of pepper

Flake the salmon and mix it in a liquidiser with the Yofu and add the other ingredients and mix again.

Spoon into a bowland freeze until ready to serve.

Remove from freezer and allow to thaw for about half an hour.
Serve on a bed of mixed salad leaves and sprinkle the top with paprika.

This recipe serves 4.
