Gazpacho Dressing
This is a deliciously appetising dressing which enhances the look and flavour of different lettuces. The proportions are variable according to what you have available. Remember the cucumber is mostly liquid and probably shouldn't be increased
1 clove garlic
1/2 fresh green chilli
1/2 small cucumber
1/2 red pepper
3 spring onions
1/4 pint olive oil
1 tablespoon apple cider vinegar
1 tablespoon lemon juice
1 table spoon fresh oregano or basil
2 pinches black pepper
Whiz all the ingredients in the liquidiser and keep in the fridge. Shake well and drizzle over salad, vegetables or rice with a spoon
